Classic Ossetra native to the Caspian Sea. Farm is located on the Rio Negro in Uruguay-- an exceptionally clean river, unimpacted by industry. The farm diverts natural river water farmed in closed, circulated water, these sturgeon never swim in the same water twice. Our caviar specialists carefully monitor, turn, and age this for 4-6 months to firm up the texture, and develop a beautiful depth of flavor.
Key findings and nutritional facts about Pearl Street Caviar include:
1. Caviar’s exceptionally high omega-3 fatty acids content exceeds that of Sockeye and Coho salmon, but without high levels of mercury and heavy metal contaminants that may reduce Omega-3s cognitive benefit.
2. Pearl Street Caviar, in particular, is especially high in vitamin D with nearly 6x that of the USDA database average for caviar.
Shipping: We ship for perishable packages to arrive fresh, Next Day or on your Preferred Delivery Date (which you can select during checkout). The Next Day cut off is 5pm Eastern Time. We don't ship on Saturdays nor Sundays.
We ship on ice with compostable wool insulation to be safe for up to 60 hours in transit.
