Enoki Mushroom and NY Strip Steak by @M0mmyeats

ENOKI MUSHROOM NY STEAK ROLLS

Another delicious recipe by PSC Chef Consultant @m0mmyeats just in time for Spring! 

Ingredients
1 inch NY steak
1 pack enoki mushrooms
4 cloves garlic
¼ cup butter
3 tbsp oil
1 tsp garlic powder
Salt and Pepper to taste
Pearl Street Caviar Keluga

Directions

Steak

  1. Let steak rest at room temperature for at least 1 hour. Pat dry with paper towels to remove excess moisture.
  2. Season steak with salt, pepper, and garlic powder on both sides.
  3. Heat grill pan or iron skillet on medium high heat. When pan is heated up, add oil to the pan coating the bottom surface of the pan.
  4. Gently lay the steak and press down with medium pressure to ensure the bottom side lays flat on the pan for best sear. Let the steak cook for 4 minutes, do not move the steak.
  5. Flip the steak and press down with medium pressure, let cook for 4 more minutes for medium rare.
  6. Throw in garlic cloves and butter into pan and tilt the pan to gather oil on one side while taking a cooking spoon to baste the oil/butter over the steak. Continue until steak is cooked.
  7. Remove steak from pan and let rest for 5 minutes before slicing.
  8. Slice the steak on a bias against the grain into thin flat strips.

Enoki Mushrooms

  1. Thoroughly clean mushrooms with a dry brush. Separate into several 1 inch bundles.
  2. In the same pan the steak was cooked on, heat to medium and add enoki mushrooms. Coat mushrooms in butter/oil mixture and cook for 2 minutes. Remove from pan and let sit.

Assembly

  1. Take a piece of sliced steak and lay flat. Add a bundle of enoki mushrooms on top of the steak and roll the steak around the mushroom stems. Repeat for other bundles.
  2. Top with Pearl Street Caviar Keluga.
