A New Spring, a New Siberian Select

This season, enjoy a new Siberian Select courtesy of the Eyre River. Velvety and complex, Siberian is a 24/7 caviar perfect for breakfast, a midnight snack, and everything in between.
The Baerii sturgeon are native to Siberia, and have evolved to be long, skinny, and snake-like to navigate rocky, shallow, and often frozen waterways. They are relatively difficult to raise as their size makes them more sensitive to the weather than bigger fish. The roe is delicate and best fresh, not aged. Thus, we rotate our source for the Siberian Select often to always keep it at its peak.
The caviar comes from a very small population of sturgeon that are cared for by one person for their entire lives. This scientist & farmer is connected to the land like the river water that runs through the farm. A couple acres of the Pascal Jolivet vineyard upstream on the Eyre River is the indicator as to any changes in terroir.
Siberian Select's traditional black pearls are featured at our bistro, Pearl's Dive, in our Silver, Gold, and The Grail flights. Pairs well with pilsner, sake, or fruity champagnes 🥂
