Caviar Batons
Ingredients:
- Fresh maple syrup
- 30 Grams Pearl Street Alchemy Ossetra (or Young Ossetra)
- 1 Lemon
- Heavy cream
- 2¼ cups all-purpose flour (270g)
- ¼ cup granulated sugar (50g)
- 1 tablespoon baking powder
- ¾ teaspoon salt
- 2 cups milk (480ml)
- ½ cup unsalted butter melted (113g)
- 2 eggs
- 2 tsp vanilla extract
- 2 tbsp vegetable oil
Specialty Tools:
- Zester Grater
- Waffle iron
- Whipped cream dispenser
Directions:
- Preheat the waffle iron.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a medium bowl, whisk together the milk, melted butter, eggs, and vanilla.
- Pour the milk mixture slowly into the flour mixture while folding and stir together until combined, no further.
- Grease the heated waffle iron generously with butter or cooking spray. Add batter until the raised parts of the iron are covered, and batter is evenly spread across the whole iron.
- Cook between 4-6 minutes. Around 4 minutes you can open and check the color and crispiness.
- Remove with a fork and place on a cutting board.
- Using a serrated knife, slice the waffle into sticks 3 squares long.
- Open your PSC Alchemy Ossetra (or Young), and place 4 grams into the first square.
- For the second square, prep your whipped cream by adding 3/4 cup heavy cream and 2 tbsp maple syrup into the whipped cream dispenser. Close the dispenser, shake, and dispense a star into the second square.
- With your lemon, zest a pinch onto the whipped cream.
- Serve in the morning with your favorite fruits, or in the evening as a midnight snack. Enjoy!
