Ossetra is caviar from the species acipenser gueldenstaedtii (pronounced roughly “ghoul-den-steady”). A modern dinosaur, it is native to the Caspian Sea and its tributaries including the Volga River. Ossetra caviar currently comes in five varieties from Pearl Street Caviar. Young Ossetra, harvested from comparatively young sturgeon from the Northern Hemisphere and is served without delay. Ossetra Supreme is harvested from an older sturgeon, who ages for an extra 6-10 years. The olive-hued eggs present a clean, harmonious tone, finishing with a subtle fruitiness reminiscent of an aged wine.

Native to the Caspian Sea. We age this for 2-3 months just to develop a pop of texture.

Key findings and nutritional facts about Pearl Street Caviar include:

1. Caviar’s exceptionally high omega-3 fatty acids content exceeds that of Sockeye and Coho salmon, but without high levels of mercury and heavy metal contaminants that may reduce Omega-3s cognitive benefit.

2. Pearl Street Caviar, in particular, is especially high in vitamin D with nearly 6x that of the USDA database average for caviar.
