Native to the Caspian Sea, Double Jiro has a full flavor that rolls into butter and cream. Harvest late in the sturgeons' gestation period produces a robust pearl that stands up well to heat. Double Jiro is a rare selection that has a steely grey color with a pronounced tiger's eye.

These Sturgeon are native to the northern Caspian Sea, where the water is comparatively low in salt and shallow. They historically spawn in the Volga River. This is a rare selection that is steely grey in color and has a pronounced tiger eye.
Persicus Sturgeon grow to be 120 - 220 lb.
