Instructions

1. Cook frozen tater tots according to package instructions (usually 18-20 minutes at 450F)

2. Make the sauce. Combine butter and flour in a small saucepan over medium heat and let cook for one minute until combined and frothy, to create a roux. Add milk and stir to combine, making sure that roux is fully incorporated. Add shredded cheese one handful at a time and mix to combine, making sure to add slowly so that lumps don’t form. Once melted, remove from heat and season with salt, pepper and paprika.

3. To plate, spread tater tots on a serving platter and liberally pour cheese sauce on top. Garnish with thinly sliced scallions, squeeze of lime, radishes and cilantro (or whatever veg you have on hand! We like adding pickled veggies or sauteed mushrooms). Liberally top with PSC Keluga and enjoy.
