Instructions:

1. Preheat the oven to 375 F
2. Cut up your Strawberries. You’ll need both thinly sliced and diced strawberries. Set aside. 
3. Lightly coat your working surface with all purpose flour and lay out a pastry sheet. Cut into your desired shape (we prefer triangles).
4. Create your egg wash by beating an egg and adding a tablespoon of water. Use a brush to lightly coat both sides of your cut puff pastries. 
5. Line a baking tray with parchment paper. 
6. Add 1 tbsp of Brown Sugar directly onto the tray and cover with a puff pastry. Continue with the remaining puff pastries. 
7. Top each puff pastry with a thinly sliced strawberry.
8. Lasty, place in the oven for 20 min or until golden brown and raised. 

The Vodka Whipped Cream 

1. Combine 1 oz of Vodka, 1 oz of Vanilla syrup and 8 oz of heavy whipping cream. (If you have a whipped cream dispenser, simply add your mixture into the canister and follow the instructions for your dispenser) 
2. In a large mixing bowl, use a handheld stand mixer to beat the cream until stiff peaks form. Be sure to constantly move the whisk evenly around the bowl. Oftentimes, whipped cream won’t form if the mixture is too warm. If this occurs,  pause and chill the mixture in your fridge for at least 15 minutes. 
3. Add your whipped cream to a piping bag. 

Assembly:

1. Once cooled, remove a puff pastry from your baking tray and place on a plate. 
2. Top the pastry with whipped cream and diced strawberries. 
3. Using a sieve, lightly dust the dish with confectioners sugar.
4. Lastly, top each pastry with ~4g of Ossetra Caviar and enjoy!
