Pearl Street Avocado Toast

This recipe makes about five toasts as shown. 

Ingredients:

  • 3 half-ripe avocados
  • 3 Tbsp of brunoise (small-diced) shallots 
  • 1 lime
  • 1 Tbsp poppy seeds
  • Salt, pepper, herbs to garnish to taste
  • Your favorite bread (fresh sourdough shown here)
  • Herbs or pickled vegetables (optional)
  • ~20g PSC Keluga per toast (a big tin is more than enough)

  • Steps:

    1. Mix shallots, salt, pepper with the juice of a lime; set aside
    2. Push avocados through a fine-mesh strainer or just mash with fork 
    3. Gently mix marinated shallots with avocado puree and poppy seeds 
    4. Serve on toasted bread of your choice, rub the bread with garlic clove (and butter) ahead of adding avocado
    5. Top with PSC Keluga caviar
    6. Garnish with your favorite herbs or pickled vegetables
