Pumpkin Blini

INGREDIENTS
- 1 cup all purpose flour
- 1 tbsp baking powder
- 1 tsp pumpkin spice
- ¼ tsp nutmeg
- ¼ tsp salt
- 1 tbsp sugar
- 1/3 cup pumpkin puree
- ½ tsp vanilla extract
- 1 cup milk
- 1 egg
- 2 tbsp melted butter
INSTRUCTIONS
1. Preheat griddle to 350F degrees. In a mixing bowl, combine flour, baking powder, pumpkin spice, nutmeg, salt, and sugar.
2. In a separate bowl, melt the butter and combine the pumpkin puree, vanilla extract, milk, and egg. Whisk until egg is thoroughly beaten for fluffiness.
3. Pour the wet ingredients into the dry ingredients and stir until there are no lumps.
4. Using a tablespoon, scoop batter onto the preheated griddle. Cook for 1 minute until small bubbles form on the surface of the blini. Flip each blini and cook on the opposite side for another minute.
