Heirloom Tomatoes and Toast with Caviar

Ingredients:
- ½ cup crème fraîche
- Kosher salt
- ½ lemon
- 4 slices country sandwich bread
- 1 garlic clove
- 1 large yellow heirloom tomato, thinly sliced
- 50 grams Pearl Street Keluga Caviar but welcome to try with PSC any caviar
- Maldon sea salt
- Freshly ground black pepper
- Extra-virgin olive oil
Directions:
- Toast bread in toaster
- Rub garlic clove on each slice of bread
- Slather each slice with crème fraiche and season with maldon salt
- Lay over thin slices of heirloom tomatoes
- Top with Pearl Street Keluga Caviar but welcome to try with any PSC caviar
- Season toast with more maldon salt, fresh cracked pepper, lemon zest and a healthy jug of extra virgin olive oil! Enjoy!
