Heirloom Tomatoes and Toast with Caviar

Ingredients: 

  • ½ cup crème fraîche
  • Kosher salt
  • ½ lemon
  • 4 slices country sandwich bread
  • 1 garlic clove
  • 1 large yellow heirloom tomato, thinly sliced
  • 50 grams Pearl Street Keluga Caviar but welcome to try with PSC any caviar
  • Maldon sea salt
  • Freshly ground black pepper
  • Extra-virgin olive oil

Directions:
  • Toast bread in toaster
  • Rub garlic clove on each slice of bread
  • Slather each slice with crème fraiche and season with maldon salt
  • Lay over thin slices of heirloom tomatoes
  • Top with Pearl Street Keluga Caviar but welcome to try with any PSC caviar
  • Season toast with more maldon salt, fresh cracked pepper, lemon zest and a healthy jug of extra virgin olive oil! Enjoy!
